Carmel's Kitchen: Grilled Chicken & Pork Chops

I love 20 minutes dinner. And that does not mean I whip out  instant noodles or fried rice. 20 minutes is good enough for some grilled meat, mash and vegies. And precisely this was what we whipped out for today's brilliantly cool Sunday.

Ingredients:
• Chicken (we opted for drumsticks for today's dinner)
• Pork loin slices
• Herbs - parsley and oregano
• Garlic
• Choice vegetable - we used carrots and tomatoes today.
• 2 potatoes
• 50ml milk
• 1 table spoon butter

Instructions:
I normally cook with my iPad in the kitchen. The reason being is that I can always refer to my recipes stashed in it or for me to take down notes when I whip out a recipe out of the thin air. This is much safer than having pieces of paper around the kitchen especially when you're using the stove. Having the tablet around is also better than me running to and fro my mac to double check on the recipe (I hate printing out recipes). And of course some entertainment while I wait for my dishes to cook:P

And if you have been having "fun" running up and down checking the recipes or perhaps having pieces of papers all over the kitchen, then you may want to consider buying a tablet (better than a mobile since with recipes, some actually come with pictures etc).

Now back to my cooking...
Grilled chicken and pork
• Chicken can be marinated at least 30 minutes before you cook or pre marinate and keep them refrigerated til you want to cook.
• Chop garlic.
• Marinate chicken and pork loin with a teaspoon of dried parsley and oregano for every 4 pieces of drum sticks or 8 slices of pork loin.
• Place meat of grilling tray with an oil pan underneath to catch the fats and juices fro the grilling.
• Set oven to 200C using the grill function for 15 minutes and the remaining 5 minutes at 180C middle rack.
• Remove the pork loin on at 10 minutes.

Mashed Potatoes
While the meat gets grilled, you can start on the mashed potatoes first.
• Wash potatoes and peel off the skin.
• Cut potatoes into cubes.
• Rub salt and pepper (to taste) plus the chopped garlic on the potatoes.
• Steam potatoes till soft.
• Mash potatoes.
• Mix milk and butter.
• Add milk and butter mix to the mashed potatoes and stir well. Do not over stir or else you end up with overly starchy mashed potatoes.

Sauteed Vegetables
• While the potatoes sit in the steamer, you can start on the sauteed vegetable.
• Slice or cut your choice vegetables.
• Saute with garlic with olive oil till golden brown.
• Saute carrots and tomatoes to the consistency you desire.
• Add in oregano and pepper when its almost ready.
• Drizzle some truffle oil if you prefer:D

Serve with love...and something that I am working on very hard is plating. Its now much easier with a big white plate which we recently acquired from Ikea. Not the prettiest setting yet but I'm getting there (I am not an artistic person so having my iPad or a tablet in the kitchen helps so I can seek inspirations from beautiful pictures - this is a good excuse to get the above mentioned Samsung Galaxy 10.1, right?)
I do not use salt to marinate the meats as the herbs are tasty enough. Grilling drains most of the oil and fat, so you can happily eat the crispy skin:D

Saya suka masakan yang dimask dengan cepat tetapi ini tidak bermakna saya menghidangkan mee segera atau pun nasi goreng. 20 minit itu cukup untuk menghidanglan masakan yang enak dan sihat. Malam tadi saya menggunakan 20 minit untuk menyediakan daging panggang, mashed potato dan sayuran.

Ramuan:
• Ayam (kami memilih peha)
• Herba kering - pasli dan Oregano
• Bawang putih
• Sayuran - kita digunakan lobak merah dan tomato hari ini.
• 2 kentang
• 50ml susu
• 1 sudu mentega

Cara:
Ayam Panggang 
• Daging boleh diperap sekurang-kurangnya 30 minit sebelum anda memasak. Kadang kala saya akan memerap daging dan disimpan di peti sejuk sehingga yang memerlukannya.
• Potong bawang putih.
• Perap pinggang ayam dengan satu sudu teh pasli kering dan Oregano untuk setiap 4 keping peha ayam.
• Letakkan daging di atas dulang panggang. D bawah dulang ini pula ialah lagi satu dulang untuk menangkap lemak dan jus dari daging yang dipanggang.
• Panggang daging to oven pada 200C dengan menggunakan fungsi grill selama 15 minit. Baki 5 minit nya suhu diturunkan ke 180C.
# Saya tidak menggunakan garam untuk memerap daging kerana herba yang digunakan sudah cukup berasa dan enak. Kulit ayam panggang adalah ranggup dan hampir semua lemak sudah mengalir keluar.

Mashed Potato
Semasa menanti ayam dpanggang, kita boleh mula dengan mashed potatoes.
• Basuh kentang dan kupas kulitnya.
• Dadukan kentang.
• Sapukan garam dan lada hitam (secukup rasa). Campurkan bawang putih yang dicincang halus pada kentang.
• Kukus kentang sehingga lembut.
• Lecek kentang.
• Gaulkan susu dan mentega.
• Tambah susu dan campuran mentega kepada kentang lecek. Adun sehingga rata. Jangan terlebih kacau untuk mengelakkan mashed potato terlalu berkanji.

Sayur Tumis
• Semasa menunggu kentang dikukus, kita boleh mula masakn sayur.
• Potong atau hiris sayur-sayuran pilihan anda.
• Tumis bawang putih dengan minyak zaitun hingga keemasan.
• Tumis lobak merah dan tomato sehingga lembut.
• Tambah dalam oregano dan lada hitam apabila hampir masak.
• Kalau sukakan minyak truffle bolehlah menitis beberapa titik.

Hidangkan ayam bersama mashed potato dan sayuran. Saya masih sukar nak hidangkan dengan cantik. namun demikian, kini is terasa lebih senang kerana menggunakan piring putih yang saya baru beli dati Ikea. Namun mesti banyak berlatih lagi...
