The Cupcake Challenge

Baking cuppies has never been a tough thingie. Its a super therapeutic and easy task that I love especially for weekend tea time. But what I have always been doing is just bake the cupcakes as they are. No biggie. The cupcake challenge for me actually starts when I have to ice the cuppies. Honestly, I have not done any icing for the last 4 years. So the weekend baking class at The Cooking House courtesy of Celcom was one of the toughest challenge I have been through.

Some may ask just how tough is icing a cake or even a cupcake? Well if you have shaky hands like mine, then actually holding a camera or even icing becomes quite a task:P

The recipe for this Vanilla Cupcake is provided by The Cooking House and its fool proof since many of my fellow never baked before blogger pals actually succeeded in baking and icing their first cupcakes! The key to baking is to follow the recipe closely!
110g Plain flour
1 1/2 tsp baking powder
125g butter
100g sugar
2 Eggs
1/2 tsp vanilla essence
2 tbsp milk

• 95g salted butter
• 260g icing sugar, sifted
• 1 1/2 tbsp milk

• Sieve the flour with the baking powder
• Cream the butter and sugar until white and fluffy :
- we were doing ours manually with a wooden spoon and that is the fun part compared to using a mixer at home:D
• Beat in eggs and fold in flour carefully. Do not overmix.
- When doing this manually, all you need is some patience rather than brute strength:P
• Add in vanilla essence.
• Fill paper cups 2/3 full.

• Bake at 180C (160C with Fan) for about 13 minutes.

Buttercream frosting
• Beat butter until creamy, scrape bowl.
- The key is to make sure that the butter is not too hard and cold.
- Break it into smaller pieces using the spatula before pressing it to soften.
- One hand holding the body of the bowl is a good tip because it helps soften the butter a little with your body heat and give you a better control of the bowl.
• Add sifted icing sugar, milk and beat until combined.
- Again lots of patience rather than brute strength.
• Add more powdered sugar as needed to get piping consistency. Add a drop of coloring if desired.
- We added the colours using the toothpicks. This is to avoid contamination to the main tube of gel colouring.
• Pipe lil flowers and we were using size 18.
- If I remembered my teacher correctly, the instructions when piping was to press a lil of the icing on to the cupcake and then pull to release. Voila we get a flower!
- Holding the piping icing at 90 degrees helps.
- Patience is also required so we get even ones.

Now that I survived the baking class or should I say the icing part, whic I have to credit my teammates  for the good job done! I am sure looking forward to Celcom's Cupcake Challenge. This contest is opened to all Malaysian irregardless of whether you are a Celcom customer and is a good show of the 1Malaysia spirit.

• Decorate your cupcake(s) with the Merdeka / 1Malaysia Day theme.
• Take a picture of your masterpiece.

• On 29th September 2012, 55 participations with the most "Likes" will be chosen to replicate their cupcake designs live and witnessed by the public. A panel of celebrity judges will choose the top three best cupcake designs based on creativity, uniqueness and closest match to the submitted photos.

The reward? We're looking at prizes worth more than RM100,000!
