Yogurt Zespri Kiwifruit Pancakes - For Our Wedding Anniversary Breakfast

The hubster and I celebrated our 12th wedding a couple of days back. Whipped out a simple brekkie for us. Pancakes using yogurt and of course Zespri kiwifruits as part of my Zespri's 14-day Daily Scoop of Amazing Challenge.
I wanted to form a heart shape pancake in the absence of a mould...and obviously the final product was  disastrous as all I could do is to try putting together 2 slices of pancakes to sort of form a heart. Looks kinda funny (KY had a good laugh when I showed him the pics over lunch) but well...that's me Miss Clumsy and blur trying to be 'romantic'.
Its OK...you can laugh...don't hold back your laughter!
So if you have a mould, then form whatever shape you want...otherwise sticking to a regular circle is an easier task:P

This simple breakfast is quick to make and total preparation time is about 10 minutes. Perfect for a hearty and healthy breakfast!
Ingredients:
• 2 Zespri kiwifruits (green cubed for garnishing and yellow mashed)
• 1 cup flour 
• 1/2 tsp baking soda
• 1 cup plain yogurt 
• 2 eggs
• 30g carob powder or chocolate chips
• 25g almonds
• Honey or maple syrup or rice malt syrup or ice cream or jam or peanut butter

Preparation:
• Combine flour, almonds and baking soda.
• Add yogurt and eggs to flour mixture and stir to combine. 
• Add in 1 Zespri kiwifruit into this final mixture.
• Now add on the carob powder. I do this so that I can get little bites of carob powder lumps. (If you are using chocolate chips then add it to the flour mix when its dry).
• Oil the pan and spoon 1/4 cup of batter into the heated pan.
• When the bubbles form on the surface of the pancakes, flip and cook until golden brown on the other side. Average cooking time for each pancake is approximately 90 seconds on each side.
• Serve pancakes hot, with butter, maple syrup, honey, or jam as you like.

In my case I topped the pancakes with one tablespoon of crunchy peanut butter and one kiwifruit for each pancake serving and drizzled rice malt syrup. Rice malt syrup is used as I am opting for a gluten free meal. Similarly, the four that I use is also gluten free that you can get easily at good organic shops like Opika Organic
Final product is fluffy pancakes that has a slight sour taste from the yogurt. That is balanced out from the natural sweetness of the kiwi embedded in the pancake and carob powder. A nice salty touch from the peanut butter. Fibre goodness from Zespri kiwifruit. Added sweetness form my choice of rice bran syrup.
