Zespri® Kiwi, Bacon & Cheese Muffin

Eating kiwis on their own is yummy enough but if you're trying to get a picky eater to start on it, then marrying kiwis into your menu will be a good idea. Was looking through Zespri®'s websites for some recipe ideas for brekkie yesterday. Stumbled upon the Choc O' Gold Muffins (click here for recipe). Sounded awesome. But soon as I started assembling the ingredients, the Mad Scientist in me started having cravings for many other stuff and ended up making the Zespri® Kiwi, Bacon and Cheese Muffin.

Recipe has been modified but they turned out well as tested by Yours Truly and the husbter. Third party opinion matters here, so I had my running buddy cum guinea pig Praveen test them too. His response on Instagram as follows:D

Recipe for the delicious and easy to make savoury and healthy Zespri® Kiwi, Bacon and Cheese Muffins:
Preparation Time: 15 minutes
Cook time: 20 minutes

Ingredients:
• 75g butter (melted)
• 2 Zespri® Kiwifruit (I used one Sun Gold and one Green) - the gold was mashed and the green was cubed.
• 250g gluten free flour 
• 2 cili padi (optional but I could not resist these lovely hot ones that I brought back from Sandakan)
• 2 tsp baking powder
• 75g caster sugar
• 75g cheddar cheese
• 1 egg
• 125ml milk
• 1 tsp oregano
• 125g bacon 

Instructions:
• Chop up cili padi. 
• Cube bacon and fry it together with the cili padi. Drain and keep cool.
• Mash Zespri® Gold kiwifruit
• Mix dry ingredients well (flour, sugar, oregano and baking powder together).

• Mix melted butter, mashed Zespri® Sun Gold kiwifruit, milk and egg together.
• Make a well in the dry ingredients and pour wet mix into it.
• Mix until well blended. You can use a mixer or as I normally do, manually with a hand mixer (I don't do gym:P).
• Once well mixed, add the bacon, cheddar cheese and half of the cubed Zespri® Green kiwifruit. Combine well.
• Spoon into the prepared muffin pan. Fill it about 3/4 full.

• Dot the top of each muffin with some Zespri® Green kiwi. You can also use some cheddar cheese on the top of each muffin if you prefer something richer.

• Bake at 190C for 20 minutes.
• Remove to a rack to cool completely.
