Recipe: No Cream Carbonara

The hubster loves his carbonara. Cheesy with bacon wonder he loves them. However, our favourite version is without cream...the way the Italians actually eat their carbonara. Its not rocket scientist efforts to whip it out. One just need to have the ingredients all in place and organised in the sequence that you need them.

It would have been nice to use spaghetti or fettuccine. However, I have a bad habit of stocking up only farfalle, spiral or macaroni because they look cute. In fact I have some animal and alphabet shaped ones too:D

• 350 grams pasta (approximately 175g per person)
• 4 eggs (1 whole egg and 3 egg yellow) 
• 125 ml parmesan cheese 
• 1 tablespoon butter
• olive oil (optional)
• 150g bacon
• 2 cloves garlic
• salt (optional)
• black pepper

• Cook the pasta following packet instructions.
• Combine eggs and parmesan in a bowl. Season with pepper and salt. Mix it well.
• Fry bacon till crispy. Separate bacon from oil.
• Fry garlic till light golden.
• Add pasta to bacon oil and toss it well.
• Stir in egg and parmesan cheese mixture. Mix well to ensure the pasta are properly coated.
• Add butter, garlic and bacon and toss well.
• Salt and pepper to taste.
• Serve with chives or topped with more bacon and grated parmesan cheese.
If you prefer an wetter version, then you an drizzle some olive oil before serving.

A meal is not complete unless I have some greens to go with it. Today we had a refreshing salad - part of our daily clean eats. 
• 1 cucumber
• 1 Celery
• 6 olives
• 2 sprigs of mint leaves
• 1 teaspoon sesame seed
• 1 tablespoon olive oil
• Juice from a quarter lemon
• Lemon rind
• Black pepper

• Cube cucumber and celery. Slice mint leaves and olives.
• Mix all ingredients well and chill.
