Recipe: Avocado Pudding

A quick and easy pudding under 5 minutes which I picked up from Brothers Green:EATS. Perfect for breakfast. Perfect as a dessert. Perfect as a post workout meal that can even be pre made and kept in the fridge like what I did for this morning's run.


The original recipe was based on an ingredient challenge by Charli XCX with avocado and chili. The boys did a a brilliant one with avocado, honey, chili flakes and cocoa powder.

Simple ingredients:
Ripe avocado
Almond milk (added protein and because I wanted to keep the recipe vegan)
Carob
Chili flakes
Garnish of your choice and I used pumpkin seed, mango, blueberries, dried cranberries and macadamia nuts

Blend the ripe avocado with a little almond milk, 2 teaspoons of carob powder and chili flakes to taste. Depending on your chili flakes, you can tweak it spicier or even omit it. What I used was a delicious Chilean chili from my Chilean pals. If you like it sweeter then add on some honey but I preferred the natural sweetness of the fruits.

In case you don't have ripe avocados, fret not. Follow my food hack in my earlier tries of Brothers Green:EATS recipes (click for more recipes and food hack) and zap the avocados in the microwave for a few seconds.

Under 5 minutes and a cost of under RM8, I made myself a filling and healthy meal.
